Ingredients

- 1 cup grated zucchini
- 1 cup mashed ripe bananas
- 1 cup rolled oats
- 1/2 cup flour
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix grated zucchini and mashed bananas.
- Add rolled oats, flour, sugar, and oil to the mixture.
- In a separate bowl, whisk eggs, baking powder, baking soda, salt, and vanilla.
- Combine both mixtures until just blended.
- Pour batter into muffin tins.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store in an airtight container.
- These muffins freeze well.
- Use ripe bananas for best flavor.
